VINEYARDS: Our grapes grow at 350metersabovesealevelonthe clay and limestone slope. The thermic excursion between day and night create an explosive
concentration of flavours in the grapes. The wine develops a minerality after taste thanks to soil composition.
VINIFICATION: Maceration at controlled temperature. Destemming followed by fermentation with maceration for10-12 days at low temperature. Ageing in French oak barrels for 8 months; bottle ageing forno less than 6 months before being released on the market.
SENSORY FEATURES: Red ruby, intense and full. Red fruit aroma, intense, with herbaceous and balsamichints.Full-bodied, tannic. Aftertaste of red fruit, warm
ending.
BEST SERVEDWITH: It marches perfectly well with cold cuts, beef tagliata and pasta. Excellent with typical mediterranea and Sicilian recipes.
